Upside Down flambed pineapple – sweet potatoes cake

 1 kg Sweet potatoes
 4 Large eggs
 175 g Butter
 250 g Sugar
 1 Vanilla
 1 tsp Ground Cinnamon
 1 tsp Vanilla Extract
 1 tsp Almond Extract
 ½ Teaspoon Ground Nutmeg
 2 Teaspoon of Maizena

1 - Clean the potatoes and boil them until they are soft, drain the, pee them and mash them when they are hot.

2 - Add whole eggs (lightly beaten) with sugar, softened butter, vanilla cut into small pieces (or 2 teaspoons of vanilla essence), rum, cinnamon and nutmeg.

3 - Pineapple: see flambed pineapple recipe.

4 - Pour the flambed pineapple and divide it evenly into the buttered baking dish(es).

5 - Pour the mixture into the mold.

6 - Bake (200 °) for one hour until the cake is golden brown.

7 - Let cool before serving.
